The pump removes the air from the bag and the chamber. When the machine reaches the programmed vacuum level, it seals the bag before gradually reintroducing air into the chamber. This process limits the amount of oxygen around the product, protecting the food from oxidation, dehydration, and external contamination. It also facilitates storage, ripening, transport, and the organization of the various production stages. However, the shelf life depends on the product, the bag, the temperature, and the hygiene regulations applied by the user. Dual chamber and bag sealing The C500 has two chambers and a moving lid.
