It is built with folded and welded stainless steel plate profiles. AUXILIARY STRUCTURE: It supports the belt in its movement. To avoid metal-to-metal contact, it is covered with a special high density polyethylene profile. DRUM SUPPORTS: The lower supports have two main functions: centering the drum and supporting its weight. In the upper part, other supports are placed whose mission is exclusively to collaborate in the centering of the drum. EVAPORATOR: A circular evaporator located at the bottom of the drum is used, which results in an important space saving and in a horizontal air circulation without dead spaces. An operator places fish belly-down and head-first into the transport trays which are moving towards the cutting blades. The machine automatically locates on gill plate or fins, aligning and securing the fish in the optimum cutting position for maximum meat recovery. The fish passes the bottom blade first andthen the top blade. The relevant angle of these blades are adjusted to provide maximum meat recovery. After headcutting, the body of the fish is delivered to the next processing station, the head being ejected separately. Infeed systems for either eviscerated or non-eviscerated fish are available. Head-off un-gutted fish or gutted fish with the bely open is fed onto the feed guide, then the fish is transported by drive belts over the belly cutting blades and belly cleaning wheel and past the backbone removal blades. The backbone and offal are ejected out of the bottom of the machine. The fillets continues to the rib removal blades, ribs are then removed from the fillets and ejected out of the bottom of the machine. Fillets exit at the outfeed of the machine.
